Jenny’s Apple Bread

We also went apple picking.  I was struggling to find something to do with all of our apples. So I checked out  www.twoclevermoms.com and found just the thing.

 

I made Jenny’s apple bread. I actually made apple mini muffins. They were delicious!! I have two things to add:

  • Mini muffins made a great snack to drop off at preschool for my big girl to have with her friends. It took about 15 minutes at 350 degrees to bake them.
  • I peeled the apples and cored them and cut them into about 1/4 inch pieces. Then in reading the directions I loved Jenny’s note:  “By the way, if you have a kid – or husband – who doesn’t like “stuff” in their baked goods, finely dice your apples and they melt away when baked with no visible or textural ‘chunks.’ ” I said to my self I do have a kid that doesn’t like “stuff” in their bread. Of course I was half way done mixing everything. So I threw the 1/4 inch apple pieces in the food processor and pulsed a couple times. The result was perfect diced apples.

  1. I made them into muffins this wkend too!
    I substituted some of the sugar for brown sugar and sprinkled
    regular sugar on top for an added crisp..
    I actually thought the chunks were the best part 😉
    Not only a family treat, but worked well for tailgating (and a mini
    loaf for a bday present!)
