Last week I made these for a teacher appreciation lunch.  I thought you would like them too.  The Energy Bars are designed for marathon runners. Or very busy children. They were my favorite mid morning snack when I was pregnant.  It was the only thing that would satisfy my appetite between breakfast and lunch.  I am sure that sun butter can be substituted for peanut butter.  The Bonus Blondies are remarkably tasty even though they are made with beans.

Energy Bars

Ingredients

  •  ½ cup unsalted butter
  • ¾ cup brown sugar
  • ½ cup peanut butter
  • 1 ripe banana
  • 1 tsp vanilla
  • 1 ½ cup quick cooking oatmeal
  • ½ cup whole wheat flour
  • ½ cup chopped walnuts
  • ½ cup raisins
  • ½ cup crasions
  • ½ cup chocolate chips

Directions

  1.  Preheat oven to 350.
  2. Oil 9×9 inch pan.
  3. In an electric mixer cream butter and sugar at medium speed for 3 minutes, beat in peanut butter until blended.
  4. Add banana and vanilla.
  5. Add oats and flour.
  6. Remove bowl from mixer. Fold in walnuts, raisins, crasions, and chips.
  7. Turn batter into oiled pan. Bake for 35 – 40 minutes.
  8. Cool completely, cover pan and refrigerate for and hour before cutting.

Bonus  Blondies

Ingredients

  • 1 – 15.5 oz can of garbanzo beans drained and rinsed
  • 2 large eggs
  • ¾ cup granulated sugar
  • 2 Tbsp canola oil
  • ½ tsp vanilla
  • ½ tsp baking powder
  • ¼ tsp salt
  • ¼ tsp cinnamon
  • ½ cup old-fashion oats
  • ¾ cup chocolate chips

Directions

  1.  Preheat oven to 350.
  2. Lightly oil a 9×9 inch baking pan.
  3. Place garbanzo beans in the bowl of a food processor until smooth and creamy.
  4. Add eggs, sugar, oil, vanilla, baking powder, salt, and cinnamon, and process until smooth.
  5. Add oats and chocolate chips pulse just until blended.
  6. Pour batter into the prepared pan. Bake 35 – 40 minutes.
  7. Let stand at least 20 minutes. Store in the refrigerator.
