Rhubarb Bread

I find that people either love or hate rhubarb. We are big fans! This bread will please even someone who is on the fence about rhubarb.

Rhubarb Bread Recipe

Ingredients

  • 1 ½ cup brown sugar
  • 2/3 cup canola oil
  • 1 egg
  • 1 cup butter milk (see note about buttermilk)
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 2 ½ cup flour (I use 1 whole wheat and 1 ½ white flour)
  • 2 cup diced rhubarb
  • 1 tbl butter
  • ¼ cup granulated sugar

Directions

1. Preheat the oven to 350.

2.Mix brown sugar and oil. Add egg, butter milk, salt, baking soda, vanilla, flour. Fold in rhubarb.

3. Pour into greased bread pan. Combine butter and sugar and sprinkle over batter.

4. Bake for 45 minutes or until knife comes out clean.

NOTE: I don’t use butter milk enough to keep the liquid variety in my house. I have found this very good powered variety: Saco Cultured Buttermilk Blend.
