Is anyone making vanilla along with me?
My 8 weeks were up last week. Here’s what the bottles look like:
The color is representative of the strength of vanilla flavor and aroma in each of them (the darker the color, the more vanilla essence). They do smell and taste different from each other, with the Indonesian beans currently smelling/tasting most like the natural vanilla extract I buy.
Overall, I think they aren’t quite done at 8 weeks, or at least the alcohol smell is about equal to the vanilla and stronger in the bourbon batch. They’ll have time to steep longer before I use this all up (and I will plan on topping them off with more alcohol as I use it up). But in the meantime I have started using the extract without anyone turning their nose up at the results!
