Last week I made these for a teacher appreciation lunch. I thought you would like them too. The Energy Bars are designed for marathon runners. Or very busy children. They were my favorite mid morning snack when I was pregnant. It was the only thing that would satisfy my appetite between breakfast and lunch. I am sure that sun butter can be substituted for peanut butter. The Bonus Blondies are remarkably tasty even though they are made with beans.
Energy Bars
Ingredients
- ½ cup unsalted butter
- ¾ cup brown sugar
- ½ cup peanut butter
- 1 ripe banana
- 1 tsp vanilla
- 1 ½ cup quick cooking oatmeal
- ½ cup whole wheat flour
- ½ cup chopped walnuts
- ½ cup raisins
- ½ cup crasions
- ½ cup chocolate chips
Directions
- Preheat oven to 350.
- Oil 9×9 inch pan.
- In an electric mixer cream butter and sugar at medium speed for 3 minutes, beat in peanut butter until blended.
- Add banana and vanilla.
- Add oats and flour.
- Remove bowl from mixer. Fold in walnuts, raisins, crasions, and chips.
- Turn batter into oiled pan. Bake for 35 – 40 minutes.
- Cool completely, cover pan and refrigerate for and hour before cutting.
Bonus Blondies
Ingredients
- 1 – 15.5 oz can of garbanzo beans drained and rinsed
- 2 large eggs
- ¾ cup granulated sugar
- 2 Tbsp canola oil
- ½ tsp vanilla
- ½ tsp baking powder
- ¼ tsp salt
- ¼ tsp cinnamon
- ½ cup old-fashion oats
- ¾ cup chocolate chips
Directions
- Preheat oven to 350.
- Lightly oil a 9×9 inch baking pan.
- Place garbanzo beans in the bowl of a food processor until smooth and creamy.
- Add eggs, sugar, oil, vanilla, baking powder, salt, and cinnamon, and process until smooth.
- Add oats and chocolate chips pulse just until blended.
- Pour batter into the prepared pan. Bake 35 – 40 minutes.
- Let stand at least 20 minutes. Store in the refrigerator.
